Weighed out 400G Mild Malt, 6.6KG Golden Promise Pale Malt Hops Weighed out and labeled up
Weighed out and labeled salts for water profile,25g Pacific Gem, 80g Fuggles Hops 30 mins, 23g Fuggles 10 mins, salts weighed into first hop addition.
I mashed in very very stiff at 52 deg C, and added more hot liqour after 20 Mins to bring the mash temp up to 66deg , By this time the mash tun was Brimming.
The Mash @ 66 Deg C Today I am using a little bit more Technology, by monitoring the mash temp and HLT temps using to PIDS from my larger brewery set up, The HLT temp is being controlled via PID
Checked the mash after 90 Mins, and disaster the temp had dropped to 55deg C, I must have not mixed well enough or something, I had also not been monitoring the mash temp, during the 90 min sacharification rest. Therefore I could only do one thing as I was not controlling the mash temperature, via RIMS or HERMS, I ran off around 4 litres of the runnings and heated them to boiling point in a large pan, then added this back to the mash, mixing well until I Hit 66 deg again, and then left it to mash for another 60 mins. I then ran off another 3 ltrs of first runnings, and boiled reducing by 15-20% to caramelise the wort and give a bit more body and colour to the final brew. Caramelising Wort

The Pre Boil
We are getting a nice rolling boil and the scum/foam formed at the start of the boil is starting to die back so its time to start adding the hops and set the timer for a 60 minute boil. Adding 80grams of Pacific Gem Hops at start of Boil
Note I am also adding epsom salts, calcium chloride, table salt and gypsum at the same time to get the water profile required. After 30 minutes its time to add some more hops. Adding 80grams of Fuggles Hops at 30 minutes
Note 80g in 25ltrs is a shedload of hops, & its smelling good by now.
After 40 minutes its time to add protofloc tablet in the brew,and Immersion Chiller I had a bit more of a calamity here as the battery went on the camera so no more photos for a bit. But in went 23g of Fuggles with 10 Mins of the boil left to go After 60 minutes is up time to turn on the cold water to the chiller and turn the element in the boiler off. 45 minutes later a check of the temperature and its 20 deg C so time to run off to a freshly sterilised plastic bucket. Fv is now full I ended up with 22.5ltrs after the boil, time to check the gravity and see how if we are getting a cold break. Gravity

The protofloc tablet is doing its job well all the proteins are coagulating and dropping out of suspension, Time to put somewhere warm and cozy around 20 deg C, and hope all goes well. Fermentation
